Produced by Yessica Parra in the mountains of Huila, Colombia, this washed Pink Bourbon is an elegant expression of clarity and balance. Careful cultivation and meticulous washed processing highlight the varietal’s refined floral character and vibrant acidity while preserving remarkable sweetness and structure.


The cup opens with the delicate aromatics of lemon verbena, followed by the soft sweetness of Anjou pear and the lively brightness of red currant. A silky body and clean, tea-like finish carry the profile with precision and elegance, revealing a coffee that is both expressive and composed.


Transparent, vibrant, and beautifully structured, this lot reflects the thoughtful craftsmanship behind some of Colombia’s most compelling modern coffees.


Why We Chose This Coffee


We were introduced to Yessica Parra through Unblended last year, when we purchased her Thermal Shock Sidra. This was our first Thermal Shock process, and we were mightily impressed with it. This year, we have gone for Parra’s washed Pink Bourbon a coffee that is often described as her signature lot. 


We love Pink Bourbon, and this particular lot showcases the varietal in its best light. It reminds us, in many ways, of why we love coffee in the first place: clean, fruity, and complex in aromatics. 


We’re also inspired by Yessica Parra as she is a formidable producer, carving out a pathway forward for not only young producers of the future but also women producers in general.
